Bacon Wrapped Poppers

It’s official: we are finally open for the 2014 camping season! Bring on the warm weather, sunshine, good times, and delicious camping food. There is nothing better than cooking around or on the fire and spending some quality time with your family and friends. Here’s a recipe that is sure to be the hit of your next camping get-together: Bacon-Wrapped Pepper Poppers! This recipe is super easy and super delicious!

Ingredients

  • 10 jalapeno peppers (or bell peppers if you don’t like spicy food)
  • 10 bacon slices
  • 10 mini sausages or smokies (or 20 if they are very small)
  • 1 cup cream cheese
  • 1 cup grated Monterrey jack
  • 1 tsp chipotle powder
  • 2 shallots, minced

Instructions

  1. Start by cooking, grilling, or smoking the sausages until they are about 2/3 of the way done.
  2. Slice the jalapenos lengthwise. Using a spoon, remove the seeds and membrane. If using bell peppers, quarter them after they are seeded.
  3. Mix the cream cheese, Monterey jack, chipotle powder and minced shallots. Fill the hollowed out portion of the peppers with the cheese mixture.
  4. Place the sausage on top of the cream cheese. Wrap the half slice of bacon around the jalapeno. If the bacon is not staying tightly wrapped, it may be necessary to use a toothpick to hold it in place.
  5. Now you can cook them on the grill or over the fire until the bacon is crispy and brown! Use low heat so that the pepper cooks all the way through!

If you want to make this recipe a little healthier, try using a chicken or turkey sausage with low fat cheeses and lean-cut bacon!
