No Bake Breakfast Cereal Bars

Breakfast is definitely the most important meal of the day, but sometimes there just isn’t enough time or energy to cook a huge meal for the family so early in the morning. cerealbarThese breakfast bars are a great alternative! They have all the nutrients of cereal and are sweet like a candy bar. Kids will love them and you’ll love sitting back and relaxing with a cup of coffee while thinking about all the dishes you don’t have to do!

Ingredients:

  • 1/4 cup unsalted butter
  • 1/4 cup honey
  • 1/4 cup light brown sugar, packed
  • 1 tablespoon vanilla extract
  • 3 cups Honey Nut Cheerios (use plain Cheerios for less sweetness)
  • 1 cup raisins, nuts, craisins, or other treat!
  • 1/2 cup mini m-n-m’s
  • Pinch of Kosher Salt

Instructions: Line an 8-inch square pan with aluminum foil, spray with cooking spray; set aside. In a large microwave-safe bowl, combine butter, honey, brown sugar, and heat on high power for 1 minute to melt. Mixture will be on the grainy side. Return bowl to microwave and heat for 1 more minute on high power. Stir. Return bowl to microwave and heat for 1 more minute on high power. Stir. After the third {and final} time, mixture will become quite bubbly and foamy. Stir in the vanilla using caution in case mixture bubbles up.Stir in the cereal.Stir in the optional goodies.Press out into prepared pan, packing down firmly with a spatula.Optional: sprinkle kosher salt on top {the salt cuts some of the sweetness} Cover pan with a sheet of foil and place pan in fridge to set up for at least 2 to 3 hours

Bars will keep airtight in the refrigerator for up to 2 weeks, or in the freezer for up to 6 months.
