Campfire Pineapple Upside-down Cake

Dessert is a meal that should rarely be skipped, especially if you are on vacation because, lets be honest, you deserve it! S’mores are always a camping staple and you can really never go wrong with those ooey, gooey bites of deliciousness, but if you are looking for a more sophisticated and sweet dessert, try the campfire pineapple upside-down cake. It is easy to make- it only needs 6 ingredients and some tin foil and cooking spray! Oh, and don’t forget about the campfire! Here is the recipe:

Pineapple chunks, fresh or canned
Poundcake, cubed {you can also use plain cake donuts, or donut holes}
Brown sugar
Whipped Cream or ice cream, if desired
Cinnamon or nutmeg, if desired
Tin foil
Cooking Spray

Spray a piece of tin foil with cooking spray
Add a handful of pineapple chunks to the middle of the foil
Top with cubed poundcake, or donut holes
Add butter and cinnamon last and wrap in a ball
Place over the fire for about 15-20 minutes
Let the packet cool and serve with whipped cream or ice cream on top!
